While this one takes a bit of prep (you have to brine the chicken for up to 12 hours to really bring out the flavors), it actually makes for a relatively easy weeknight meal! Just add a small pat of butter under the skin of each of the pieces of chicken and roast until the internal temperature reaches 165°F.
Serve as is or with a side of soul-satisfying mashed potatoes.
