Edible Flower Shortbread Cookies
This classic shortbread cookie recipe gets a fun springtime twist with the addition of delicate edible flowers and would be perfect at a luncheon, shower or any teatime spread.
You can even use your favorite springtime cookie cutters to make these cheerful cookies even brighter. Not sure what type of flower is safe to eat? Chamomile, pansy, mini dianthus, viola and borage blossom are great choices, but there are lots of edible flower varieties that you can choose from!
Just be sure to press the flowers into the cookie after removing them from the oven so they retain their color.
Chef’s Note: Only certain flowers are edible. Make sure you’re buying ones that are safe to eat—talk to a local florist for varieties available near you.
Individual Strawberry Galettes
Dessert recipes that call for strawberries can do no wrong in our opinion. We especially love them in the late spring, when strawberries are ultra-fresh and coming into peak season!
This delicious and easy-to-make dessert recipe uses free-form, buttery tart dough as its base—and has a rustic, homey vibe guests will love. Filled with a mixture of fresh strawberries, sugar and a hint of lemon juice, the galettes are baked until golden brown and flaky, then served warm with a dollop of whipped cream or ice cream.
Lemon Lime Tart
This bright and tangy tart is a delicious and refreshing dessert that combines two classic citrus flavors.
Made with buttery shortcrust pastry and filled with a creamy lemon-and-lime curd, this spring baking classic is sure to be a hit with your family and friends. You can even bake it in mini tart pans for fun, individual-sized servings.
Serve it with a scoop of vanilla ice cream for a truly decadent treat.
Rhubarb Upside Down Cake
This rhubarb cake recipe is just as tasty as it looks!
It starts with a layer of sugared rhubarb and raspberries on the bottom of the pan, followed by a layer of vanilla cake batter. When it comes out of the oven, the rhubarb has softened to create a sweet and tart topping for the cake. The perfect balance of flavors makes this cake a delicious and impressive spring baking treat that will be a hit at any gathering!
We love serving this cake in a cast iron skillet, but a 9-inch cake pan can also be used.
Vanilla and Blackberry Cupcakes
We love berry-based desserts, so we’re especially excited when they start coming into season in late spring.
This one calls for a creamy, decadent cream cheese frosting atop a simple but enticingly moist vanilla cupcake that’s filled with a tongue-tickling, homemade blackberry jam. Garnish with a fresh blackberry and watch them disappear faster than the rainy, dreary days.
Lavender Macarons with Dark Chocolate Ganache
Nothing makes us think “spring has sprung” quite like the little pops of pinks and purples that appear with the changing season.
And with a dark chocolate ganache filling layered between delicate flavors of lavender, every bite is sure to garner a sunny, satisfied smile.
