One thing about us: as soon as the temps creep up around 70°, all we want is a plate of tacos.
And really, who can blame us? The combination of grilled and marinated meat, layers of spice and fresh toppings is the perfect complement to sunny days. Paired with a cold, classic margarita, of course.

Shrimp Tacos with Avocado Crema
When a delicious, tangy, savory dinner comes together in under 30 minutes, that’s a winner in our books! And with a homemade avocado crema to top it off, this shrimp taco recipe is an excellent addition to your weekly rotation.
Baja Fish Tacos
There’s something about perfectly grilled fish tacos that has us dreaming of sand, sea and ample sunshine. We especially love how simple this fish taco recipe is—the snapper is lightly seasoned with salt and pepper, which allows the layers of jalapeño, cilantro and lime juice from the homemade slaw to really shine.
Shredded Pork Soft Tacos
If you’ve ever craved pork tacos midweek but couldn’t bear the thought of having to cook the meat for 8 hours, this is the taco recipe for you!
A pressure cooker or multicooker cuts the prep time for the pork down to just under 2 hours, which means less time spent cooking and more time enjoying the layers of warm cumin and chipotle, bright and tangy citrus and savory, juicy pork.
Mojo Pork Tacos
If you have yet to indulge in the tangy, garlic-citrus flavor combo that is mojo, this is your sign.
This recipe strays from tradition by using chipotle chilies and paprika, but trust us, the layers of smoke with a touch of heat are a welcome addition. Top with your favorite accoutrements—we like cilantro, cotija cheese and Mexican crema.
Chorizo Tacos with Pico de Gallo and Avocado Crema
If you’ve got a free Saturday night, we highly recommend giving this chorizo taco recipe with homemade corn tortillas a try.
Not only are the corn tortillas homemade (and we swear, we might never go back to store-bought again!), but the fresh pico de gallo and avocado crema are also “from scratch,” which makes every bite of these lightly spiced chorizo tacos pure bliss.

Chicken Fajita Skillet
Sure, fajitas are technically just deconstructed tacos, but we think their “have ‘em your way” style makes them perfect for taco night.
And while this fajita recipe takes a bit of preparation (the chicken needs to marinate for at least 2 hours), it’s all cooked and served in a cast iron skillet and comes together in under 30 minutes. Serve with your favorite flour tortillas and taco toppings.
Adobo Chicken Fajita Bowls
Quick history lesson: “adobo” is derived from a Spanish word meaning “marinade,” and you’ll find different versions of adobo all across the globe—from the Philippines to Puerto Rico.
This chicken fajita recipe is inspired by Mexico’s wet adobo and brims with notes of cumin, cayenne, paprika and chili powder. To make this fajita bowl into tacos, simply omit the rice and serve with your choice of flour or corn tortillas.
Carne Asada Fajitas
The secret to excellent carne asada? The marinade.
And this one—with its layers of chili peppers, citrus, umami, garlic, cumin and coriander that all work together to make the meat juicy and tender—is hands down our favorite.
