Ingredients
- 12 oz elbow macaroni
- 2 cups fresh spinach
- 1 cup kale, stems removed
- 2 cups sharp cheddar cheese, shredded
- 1½ cups whole milk
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Blend spinach and kale with ½ cup milk until smooth.
- In a saucepan, melt butter over medium heat. Add remaining milk and green purée.
- Stir in cheddar until melted and smooth.
- Toss with pasta, season to taste, and serve warm.
