Green Mac & Cheese

This vibrant twist on a classic comfort food swaps heavy cream for a silky blend of spinach, kale, and sharp cheddar — giving you all the indulgence with a boost of greens. Carla Hall’s Green Mac & Cheese is proof that soul food can be as nourishing as it is delicious.

Ingredients

  • 12 oz elbow macaroni
  • 2 cups fresh spinach
  • 1 cup kale, stems removed
  • 2 cups sharp cheddar cheese, shredded
  • 1½ cups whole milk
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Blend spinach and kale with ½ cup milk until smooth.
  3. In a saucepan, melt butter over medium heat. Add remaining milk and green purée.
  4. Stir in cheddar until melted and smooth.
  5. Toss with pasta, season to taste, and serve warm.
