Rose’s Salsa

Description

This is an old family recipe, just not my family!

It comes from a friend of mine named Rose who I met through cub scouts when my children were growing up. It is her family recipe from many generations back and is the most amazing salsa. I am always asked to make it for family functions, and it is my go-to for potlucks. It even won my neighborhood salsa contest last year.

Sur La Tip: Since it requires only ½ a lemon and ½ an onion you might as well make two batches. You will need it because it goes fast!

Ingredients

1 garlic clove

1-2 serrano peppers

1 can large can of Whole Peeled Tomatoes

1 teaspoon salt

1 teaspoon sugar

1 teaspoon lemon pepper

½ lemon squeezed

dash of vinegar

dash of oil

½ white onion

handful of cilantro tops

Procedure

1. Put garlic and peppers into a food processor (a blender can be used but will put a lot of air into the salsa and will not be able to be served immediately), pulse a few time until coarsely chopped.

2. Add tomatoes (drain) and everything else except for the cilantro and the onions. Pulse 3 or 4 times until everything is well mixed.

3. Add onions and cilantro. Pulse just a few times until the onion is the desired consistency. Adding the onions at the end is VERY important, otherwise they will become pureed and make a gross texture for the salsa.

4. Refrigerate overnight to let the flavors mingle.

Note: Best made the day before, especially when using canned tomatoes.
