Braised Pork Loin

Ingredients:

  • 1½ Tbs. Kosher Salt
  • 1 Star-Anise
  • 6 oz. Bacon, cut into ¼ inch cubes
  • 1 lb. Brussels Sprouts, halved
  • 2 Garlic Cloves, thinly sliced
  • 1 Green Apple, diced
  • 2 lbs. Pork Loin
  • 4 Tbs. Sunflower Oil
  • 1 Medium Onion, diced
  • 12 oz. Mixed Mushrooms, sliced
  • 1 Jar Caramelized Onion Gravy
  • ¼ cup Heavy Cream
  • 1 cup Low Sodium Chicken Stock
  • 1 lb. Fingerling Potatoes, parboiled and cut into pieces
  • Salt and Pepper

Step-By-Step Instructions

1. Prep Ingredients

  • Halve Brussels sprouts for even cooking.
  • Dice the apple into ½-inch cubes.
  • Finely dice the onion to release its flavor as it sautés.
  • Cut the bacon into ¼-inch cubes to render evenly.
  • After parboiling, slice the fingerling potatoes into ½-inch pieces.

2. Create a Spice Blend

5. Prep Pork Loin

6. Sear the Pork

10. Let the Pork Loin Rest

Place the sliced tenderloin back on top of the gravy, potato and mushrooms. Garnish with the Brussels sprouts mixture, serving the remaining as a side dish.
